Ingredients for khichdi recipe:

  1. 1 cup rice
  2. 1/2 cup split yellow moong dal (yellow lentils)
  3. 2 tablespoons ghee (clarified butter) or oil
  4. 1 teaspoon cumin seeds
  5. 1 small onion, finely chopped
  6. 1 small tomato, chopped
  7. 1 inch piece of ginger, grated or finely chopped
  8. 2-3 cloves of garlic, minced (optional)
  9. 1 green chili, finely chopped (optional)
  10. 1/2 teaspoon turmeric powder
  11.  Salt to taste
  12. 4 cups water
  13. Fresh cilantro leaves for garnish (optional)

Instructions how to make a khichdi:

1. Rinse the rice and moong dal separately under cold water until the water runs clear. Soak them in water for about 15-20 minutes, then drain and set aside.

2. In a pressure cooker or a large pot, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.

3. Add chopped onions and sauté until they turn translucent.

4. Add grated ginger, minced garlic (if using), and chopped green chili (if using). Sauté for another minute until the raw smell disappears.

5. Add chopped tomatoes and cook until they become soft and mushy.

6. Add turmeric powder and salt to the pot. Mix well to combine with the onions and tomatoes.

7. Add drained rice and moong dal to the pot. Stir well to combine with the onion-tomato mixture.

8. Pour water into the pot and give everything a good stir.

9. Close the pressure cooker lid or cover the pot with a lid. If using a pressure cooker, cook on medium-high heat for 3-4 whistles. If using a pot, cook on medium heat until the rice and dal are cooked through and the khichdi has a thick consistency, stirring occasionally. This usually takes about 25-30 minutes.

10. Once done, let the pressure release naturally from the pressure cooker before opening the lid. If using a pot, check the consistency of the khichdi and adjust water if needed.

11. Garnish the khichdi with fresh cilantro leaves (optional) and serve hot with yogurt, pickle, or papadum.
